Spicy Carrot Cake

Makes: 1 cake

1) Heat oven to: 350°
2) Grease and flour a 12 cup fluted tube pan.
3) In a large bowl, combine sugar and oil; add eggs, one at a time, beating well after each addition.
4) In a medium bowl, combine remaining ingredients. Add sugar mixture, mixing just until dry ingredients are moistened. Pour into prepared pan.
5) Bake at: 350° for 45-50 minutes or until done.
6) Cool for 10 minutes and remove from pan.
7) Cool completely and drizzle with sugar icing.
